I'm going electric and I'm confused

Been playing acoustic for years, finally going to drop some cash on an electric.

I've narrowed it down to 3 guitars.

Option 1: dual humbuckers with 1 master vol and 1 master tone knob with 3-way switch
Option 2: dual humbuckers with 1 tone / 1 vol knob for each pickup (4 total) and a 3-way switch
Option 3: neck humbucker and bridge single coil with the same config as Option 2 (4 total knobs versus 2 total on Option 1).

I play bluesy rock/alt country, and play a little rhythm, a little lead.

Do I need more knobs or less, two of the same pick ups or one of each.
I know humbuckers sound meaty and single coils are more twangy but I have no idea what the hell all those little knobs do.

ANY opinions would be appreciated
