I used to have problems like this, too. Something that I've found useful is to learn the solos from songs you like, you'll pick up nezt little techniques and things to throw into your own solos. I would keep grinding those scales into your head over and over and over again, I'd also learn the Aeolian mode, which a lot of people use in solos. The trick if you practice enough is that you eventually stop thinking about it and just do it. When solos are mainly thought about they usually sound like scales. If your problem is doing one live, then write on beforehand, and drill it repeatedly until you don't even think about it.
Most importantly though, have fun. If you're not playing guitar to make yourself happy, then why are you playing?
