Pinch harmonics are very easy once you get the hang of it. Technically, you don't pinch anything. In order to obtain the effect you must grip the pick pretty firmly and place the thumb toward the tip of the pick (the part that touches the string). Now, the next part has to be done at the same time, very precisely. Once the string is plucked, touch the string with the side of the thumb VERY,VERY LIGHTLY or else you will kill the string. This is what makes the harmonic. Depending on where your thumb touches the string, a different harmonic will be produced. The most common harmonic is produced right above the middle pickup (in a three single coil setup). I hope this helps. Good luck.
