Here's what i like to do:
1) achieve the basic metal form by cranking up the high and low frequencies on the eq and dropping middle
'V' shape
2) then do the same with my amp, and turn the high down until i get a nice crunch

now if you turn high down too much the sound will become muddy, having it too high makes the sound too earsplitting. this works for me, basically i use eq just for the basic form and then finetune with my amp, i'm not sure if this will give you the sound you're looking for though.
