I just bought a Santana SE and i want to put EMG-81's in it but there are only two knobs on my guitar (tone, volume) and it says that the EMG's have two volume controls. Will they still work?

www.guitarelectronics.com also has a heap of guitar wiring schematics that a printable, clear and free. Don't forget that EMG pups sound best with 25 or 50k pots, not the standard 250 and 500k found with passive pups. If I may, can I suggest a stacked vol/vol pot and EMG's own BTC (bass, treble control)? I've picked up the BTC on Fleeb for very little money. This would give you vol control over each pup and a rather nice active cut/boost for the bass and treble. Seeing as the 81s need a battery anyway, might as well have active preamp. The circuit board is the size of a fingernail and is attached to the pot so I can't see a need for any extra routing or drilling.
