Dark Star mate. You'll need a good a/d interface. I use an RME Multiface with XP SP2. Latency is 0.3ms which makes it even good for doing midi drums. But as you said, ideally we want to record a clean signal and then change the amps and effects later. Guitar Rig is the business for me mate. Good luck.
